Directly from the Campania tradition, spaghetti with clam is definitely one of the most important dishes in Italian cuisine and is very popular among beginners.

A simple seafood recipe that hides a few secrets to get the perfect result. Delicious clams, a hint of parsley and a natural cream with starch in pasta, spaghetti brings real pleasure to clams. Dinner with friends, a great meal for Christmas Eve or New Year’s dinner is perfect for any occasion.


  • Spaghetti 320 g
  • Clam 1 kg
  • Garlic 1 clove
  • Parsley 1 pack
  • Extra virgin olive oil
  • Black pepper to taste
  • Good salt to taste
  • Thick salt for the stock to taste


To prepare spaghetti with clams, start with a fork. Make sure there are no damaged or empty shells, they will be discarded. Then hit the clams on the sink, or perhaps on a cutting board. This operation is important to check that there is no sand in it: healthy beavers remain closed, filled with sand, and vice versa. Then place the clutch in a bowl on a plate and wash. Place the pot in a bowl and add a pinch of salt. Let the clutch flow for 2 to 3 hours.

After this time, the clutch clears all the remaining sand. Heat a little oil in a saucepan. Then add a clove of garlic and when this spice is done, wash the clutch thoroughly, rinse it and put it in a hot pot. Cover and cook on high heat for a few minutes.

The clutch opens hot, so shake the pan occasionally until it is completely open. Turn off the heat as soon as it is all opened, otherwise the clutch will ripen. Collect the juice by pouring the bivalves and do not forget to discard the garlic. Meanwhile, cook the spaghetti in a lot of salted boiling water and pour it in half.

Then pour the sauce into a saucepan, add the spaghetti and continue cooking using a little boiling water. This way they cook the pasta. At the end of cooking, add the clam and chopped parsley. The final “sfiammata” and spaghetti are ready with clam: serve immediately!


It is recommended to drink spaghetti with clam as soon as you are ready, but you can keep it in the fridge for up to a day. If you do not eat the clutch immediately, you can put it in a large bowl filled with cold water or wrapped in a dry cloth in the refrigerator.
