Ingredients (for 2 pizzas)
300 g type 45 or 55 flour, 1 tbsp dry bread yeast, 5 g salt, 100 g fresh ricotta, 1 tbsp dried oregano, 1/2 puff pastry leaf, 10 cl olive oil olive, fig oil, pepper.
Dip one tablespoon of baking soda in warm water 15 to 20 cm. Pour the flour into a deep bowl, add 5 g of salt and 2 cm of olive oil, pour hot water over the yeast and mix well until smooth and compacted flour forms (5 to 10 minutes).
Cut the ball in half and create two more. Let stand for 1 to 2 hours under a clean cloth.
Then roll in a circle, cut into diamonds, secure the circle.
Mix Ricotta, parsley, oregano, 8 cl olive oil and pepper.
Spread this dough over small diamonds, cover and leave to rise for another hour, then place in a preheated oven at 220 degrees for 7 to 10 minutes.
Enjoy pizza diamonds directly from the oven by serving chili oil.
